The first time I had a deep fried turkey, was the first time I truly enjoyed Turkey on Thanksgiving day. I don't think I hate turkey, I just have a grudge against it being used as a "healthier" alternative to my favorite meats, like bacon. However, the blessed glory of peanut oil forgives all transgressions, and and cooks in half the time!
I must caution however, that deep frying is dangerous enough on a small scale, but dropping a giant bird into 2 gallons of hot oil can go very bad very fast if you don't know what yer doing. The first step is to get yourself a first rate Turkey Fryer, like this one from Bayou. Four sturdy legs, 32qt stainless steel pot, and a perforated fry basket are what you wanna look for. Or not to Fry...
If you don't have the space to deep fry a turkey, or feel like going a bit more traditional, don't forget to pick yourself up a probe-thermometer. Every time you open the oven door, you add 5-10 minutes of cooking time, and all that extra time will dry out yer bird. You can go fancy like this All-Clad timer for $50 bucks from Williams-Sonoma, or a $20 dollar unit from Target; they all work the same.
