I warned readers that my mom's
alchemical formula recipe for angel food pie is difficult and a couple commenters said they were willing to face the challenge head on. There's three comments to lift up today - with a funny ending.
First Patricia Nell Warren tells us some basics about the dessert. Mom is a year older than Patricia, so I found the history lesson interesting.
Bil, I'll try your mom's recipe in a few days. The base is a blancmange, a very popular dessert of yesteryear, homemade ancestor of today's store-bought dessert puddings sold in little boxes. And yes, a blancmange has to be cooked slowly and carefully. You'd have to fold in the egg whites when the blancmange is cool, but hasn't totally set up yet. I'll betcha it's a real good pie.
